Lately, I’ve been on a crock pot binge. Whether it be the convenience of a hot meal with little prep, or the way that it fills my apartment with a mouthwatering scent, I’m obsessed and it all began with crock pot breakfasts for luxuriously lazy mornings. Chaos is a part of my morning routine and somehow the evenings don’t feel much different these days. So I began my very sophisticated research to find easy meals for lunch and dinner (on Pinterest of course).
And so, I share this deliciousness with you. Cook on fellow worker bees, cook on.
As always, I like to find healthy options. This creamy chicken recipe is made with just six ingredients and is only 311 calories per serving! The recipe’s creator, Skinny Mom, says “This is a great place for hiding veggies from your pickiest eaters!” Healthy and delicious? Rock on.
Sometimes I forget that copycat recipes exist. This one, my friends, is one that should never be forgotten. What’s better than Olive Garden Zuppa Toscana soup? Zuppa Toscana soup in the comfort of your home paying half the price for a week’s worth of lunch, that’s what! #YoureWelcome
It seems most crock pot recipes involve chicken, so I was very excited when I found this one—a good way to get your fill of beef for the week. This recipe requires a little meat roasting (and seasoning), adding vegetables, and broiling a little provolone cheese on top (my favorite part) before serving the sandwich. Enjoy!
Enchiladas are one of my favorite things to make, but I’m often discouraged at the thought of the prep when I get home from work. Ummm, take-out will do instead. This recipe calls for shredded chicken, which I usually make and have on-hand anyway. In the morning, roll up the enchiladas, cover them with sauce and cheese, and voila, you come home to a delicious meal after work (or school).
Bread in the crock pot? I had no idea! Who would have thought you didn’t have to own one of those fancy bread makers like your mother and grandmother? While it may take a little trial and error to figure out the time to bake (based on the size and heat of your slow cooker), I’d say it’s worth a try.
In my quest to find crock pot recipes, I asked myself, what are some weird recipes I’d never think to make in the slow cooker? I stumbled upon crock pot chicken cordon bleu—yet another meal I’d never think to make myself. Again, my crockpot saves the day, making all my food fantasies possible.
Soups in the crockpot are one of my favorite meals… especially with fall approaching (as much as I hate to admit that). This soup is perfect for tailgating, lunch, or quick family dinner at home. Don’t be afraid to use Tostitos scoops to make this soup a dippable snack as well.
French dips are my thing. When I go for a night out, I always skim the menu for this sandwich. At home, however, I never think to cook it up. I have always been under the impression that french dips, with the au jus and all, are a ton of work. Work no more. This recipe saves you a step by using the juice and broth of the meat for the au jus. Slap it on a bun and you’re golden ponyboy.
For quick and easy lunches and dinners, refer to these recipes. You’ll be happy when you come home to a pre-made meal and you don’t have to heat up your kitchen with the stove on 90-degree, 95 percent humidity days like today. #Phew
